How much to order

A good rule of thumb for grilled chicken platters is to plan for one quarter-to-half chicken portion per adult, then add sides generously — rice and sides run out faster than the protein at most parties. If you're mixing in sandwiches or bowls alongside a chicken platter, you can scale the chicken portion down slightly.

What travels well

Not every dish holds up the same after 30-45 minutes in transit. Grilled chicken inasal actually travels better than most fried or sauced dishes — it doesn't get soggy, and it reheats well if you need to hold it before serving. Rice sides and pickled vegetables like atchara also hold up well at room temperature, which is why they're a staple of Filipino party spreads (salo-salo) in the first place.
