Ask ten Filipino families for their adobo recipe and you'll get ten different answers — more soy sauce or more vinegar, bay leaf or no bay leaf, coconut milk or none at all. That's not a contradiction. Adobo was never a single dish; it's a method, and every household has its own version.

What "adobo" actually means

Before Spanish colonization, Filipinos were already stewing meat in vinegar and salt to preserve it in a tropical climate — no refrigeration required. When Spanish colonizers arrived and saw the technique, they called it "adobo," after their own word for a pickling marinade. The name stuck, but the dish stayed distinctly Filipino: vinegar, soy sauce, garlic, bay leaf, and peppercorns, simmered low and slow until the sauce reduces into something dark, garlicky, and a little sharp.

Why every family's version is different

Adobo varies by region and household because it was built to use whatever was on hand:

Adobong manok — chicken adobo, the most common version
Adobong baboy — pork adobo, often richer and fattier
Adobo sa gata — finished with coconut milk for a creamier, milder sauce
Adobong puti ("white adobo") — made without soy sauce, so the vinegar and garlic lead

What ties them together isn't a fixed ratio — it's the balance of sour, salty, and savory hitting all at once.

Rice is not optional
